[Foodie Friday] Apple Cinnamon Protein Muffins

How many of us just grab a bar on the way out the door, or a muffin at a coffee shop in the morning?

More than likely your "on the go" breakfast foods are loaded with sugar and non-nutritious, processed ingredients. They're also usually lacking protein and quality fats.  

Bake a batch of these muffins this weekend, and you'll have nutritious breakfast "on the go" ready for the week!

Apple Cinnamon Protein Muffins
Servings: 12
Ingredients
  • 2 cups rolled oats
  • 1 apple, diced
  • 2 scoops protein powder
  • 4 egg whites
  • 1 cup of non-fat Greek yogurt
  • 2 tbsp. turbinado sugar or brown sugar
  • 2 tsp. cinnamon

  • 1⁄2 tsp. baking powder
  • Pinch of salt
Directions
  1. Pre-heat oven to 350
  2. Prepare a muffin pan by either brushing with each with a little coconut oil or spraying with some cooking spray. 

  3. Combine all the ingredients in a large bowl and mix well.
  4. Once everything is combined, divide evenly.
  5. Bake for 18-20 minutes.
  6. Let cool and enjoy.
